Food Love:

– Went out on a limb and tried this Cumin-Spiced Chickpeas and Carrots on Couscous.  Delish!   I added a handful of feta and it was delicious!  Even Nate enjoyed this vegetarian dish and it was nice to make something that really varied from our typical menu. I want more and more chickpea recipes!

Freezing pre-chopped green onions?  Smart.

– I made homemade ricotta cheese!   It was ridiculously easy and yields almost 2 cups.  I used it to stuff pasta shells.

– I was long overdue for making my homemade eclairs again.  I forgot how good they are.

-We also whipped up our favorite Butterscotch Cream Pie recipe this week.   I may have had a slice for breakfast.

-Made these Lemon Crinkle Cookies.  I’m conflicted on these.  They were fresh, light, tasty and even my friend asked for the recipe. BUT I think I just will never find a cookie that lives up to the classic chocolate chip cookie.   If I am going to take the time to bake, I want warm chocolate chip cookies!  With that said, the lemon cookies were very good.

Culinary Failures:

– This Roasted Red Pepper and Feta Quinoa Salad was just OK-   I was not blown away.  We ate it but I won’t make it again.  However, it may be my fault.  I used dried oregano in place of fresh and undercooked it slightly so it was a little wet.

– I was pretty disappointed with this sugar-free strawberry lemonade.  Again, it was most likely my fault it did not work.   I was trying to make it work in a blender when I was supposed to use a juicer.  I could barely taste the lemons and thought it just tasted like a pureed apples and strawberries that needed to be sweetened.  I am going to freeze it in cubes for Autumn’s baby food.

-I removed the Creamy Chicken Taquitos recipe from my recipe binder.  The first time I made it, I loved it but have not liked it any other time I have made it.  Do you ever have recipes that only turn out the first time?

  1. I’m not a huge fan of those taquitos. I mean, they’re alright but somehow I feel like the name promises more than the taste delivers.

  3. I love these kinds of posts, Melanie. Thanks for sharing. I’m also curious about the taste of the homemade ricotta. Did it taste the same or better than store bought?
